  • 7 large bell peppers
  • 1 pound lean ground beef
  • 1½ cups cooked brown rice
  • 14.5 ounces diced tomatoes
  • 1 cup shredded cheddar jack cheese
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 23 garlic cloves, minced
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 2 teaspoons paprika
  • Kosher salt and pepper to taste

Instructions

  1. Preheat oven to 375°F. Prepare bell peppers by removing tops and cores.
  2. In a pan, heat olive oil over medium heat; sauté diced onion for 3-4 minutes until softened. Add minced garlic and cook for another minute.
  3. Add ground beef to the pan; cook until browned (about 5-6 minutes).
  4. Stir in cooked brown rice, diced tomatoes, tomato paste, oregano, paprika, salt, and pepper; simmer for 4-5 minutes.
  5. Stuff each bell pepper with the beef mixture; place in a baking dish.
