  • 6 cloves garlic, chopped
  • 3 anchovy fillets
  • â…“ cup dry white grape juice
  • 1 (28-ounce) can crushed tomatoes
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ½ cup olives, halved and pitted
  • 2 tablespoons capers
  • 1½ pounds white fish (cod, halibut, or tilapia)
  • Sea salt to taste

Instructions

  1. Preheat oven to 400°F.
  2. In a large ovenproof skillet, melt butter over medium heat. Add garlic and anchovies; cook until fragrant (about 1-2 minutes).
  3. Stir in grape juice and let reduce for about 4 minutes. Add crushed tomatoes, oregano, and thyme; simmer for 10 minutes.
  4. Mix in olives and capers evenly throughout the sauce.
  5. Season fish with sea salt and place into the skillet with sauce. Bake for 8-10 minutes until fish is opaque and flakes easily.
  6. Serve garnished with fresh herbs.
