  • 1 tbsp Olive Oil
  • 300 g Cavatappi Macaroni
  • 5 Onions (thinly sliced)
  • 1/2 cup Beef Broth
  • 3 cups Heavy Cream
  • 1 cup Parmesan Cheese (grated)
  • 1 tbsp Flour + 3 tbsp Water (for béchamel)

Instructions

  1. Thinly slice the onions and caramelize them in olive oil over medium heat for 30–40 minutes until golden brown.
  2. Deglaze the pan with beef broth, simmering for an additional 10 minutes.
  3. In a separate skillet, create a béchamel sauce by whisking flour into melted butter, gradually adding heavy cream until thickened.
  4. Mix two-thirds of the caramelized onions into the béchamel, then stir in salt, pepper, chopped parsley, and grated Parmesan.
  5. Cook the cavatappi macaroni until just under al dente, then combine it with the béchamel mixture.
  6. Transfer to a baking dish, topping with remaining onions and breadcrumbs.
  7. Bake at 350°F (175°C) for about 10–15 minutes until golden.
