  • 16 ounces small button mushrooms
  • 2 tablespoons olive oil
  • 4 cloves garlic (chopped or crushed)
  • 1 medium onion (minced)
  • 1/2 cup chicken stock or white grape juice
  • Zest from 1 medium lemon
  • 1 tablespoon lemon juice
  • 4 tablespoons butter (divided)
  • Chopped parsley for garnish
  • Salt and pepper to taste

Instructions

  1. Clean the mushrooms, trimming any dried-out stems if necessary.
  2. Heat olive oil in a large skillet over medium-high heat. Add mushrooms and sauté until browned, about 3-5 minutes.
  3. Add 2 tablespoons of butter, then the minced onions and garlic. Cook until onions are caramelized, another 3-5 minutes.
  4. Pour in chicken stock or grape juice along with lemon zest, lemon juice, and chili flakes. Cook for about 2 minutes to reduce the liquid slightly.
  5. Stir in the remaining butter and chopped parsley, seasoning with salt and pepper to taste. Serve warm.
