  • 450 grams ground chicken
  • 60 grams grated Parmesan cheese
  • 60 grams breadcrumbs
  • 15 grams fresh parsley (finely chopped)
  • 3 garlic cloves (minced)
  • 1 large egg (beaten)
  • 1 teaspoon dried oregano
  • 60 millilitres whole milk
  • 2 tablespoons extra virgin olive oil

Instructions

  1. Preheat your oven to 190°C (375°F).
  2. In a large bowl, combine ground chicken, Parmesan, breadcrumbs, parsley, minced garlic, beaten egg, oregano, salt, and pepper.
  3. Stir in the milk until everything is well mixed.
  4. Shape the mixture into four compact mini loaves and place on a lined baking sheet.
  5. Drizzle each loaf with olive oil and sprinkle mozzarella on top if desired.
  6. Bake for 25–30 minutes until golden brown and cooked through (internal temperature should reach 74°C). Let rest for five minutes before serving.
