  • 1 large bulb of garlic
  • 1.3 kg (2.8 lb) baking potatoes
  • 75 g (5 tbsp) butter
  • 2 tbsp heavy cream
  • 60 g (3/4 cup) freshly grated parmesan cheese
  • 4 large egg yolks
  • Salt and pepper to taste
  • Olive oil as needed

Instructions

  1. Preheat the oven to 180C (356F). Cut the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast for 50-60 minutes until soft.
  2. While the garlic is roasting, peel and dice the baking potatoes. Boil in salted water until fork-tender. Drain well.
  3. In a pot, combine drained potatoes with butter, cream, roasted garlic (squeezed out), and parmesan cheese. Mash until smooth and season with salt and pepper.
  4. Mix in egg yolks one at a time until fully incorporated.
  5. Spoon the mixture into a piping bag fitted with a star tip and pipe onto a lined baking tray.
  6. Bake at 200C (400F) for 15-20 minutes until golden brown on top.
