  • 1 (8 oz) center-cut beef filet
  • 1 tbsp olive oil
  • 2 tbsp Dijon mustard
  • 1 cup mushrooms (cremini or button), finely chopped
  • 1 tbsp butter
  • 2 cloves garlic, minced
  • 1 tbsp fresh thyme leaves
  • 3 slices prosciutto
  • 1 sheet puff pastry
  • 1 egg yolk (for egg wash)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Sear the seasoned beef filet in a hot pan with olive oil for 1–2 minutes on each side until browned. Let it rest and brush with Dijon mustard while warm.
  3. Prepare mushroom duxelles by sautéing garlic and thyme in butter, then adding chopped mushrooms until moisture evaporates. Cool completely.
  4. On plastic wrap, layer prosciutto slices, spread mushroom mixture over, place beef on top, and roll tightly. Chill for 15 minutes.
  5. Roll out puff pastry on a floured surface and wrap the beef securely; seal edges with egg wash.
  6. Bake on a baking sheet for 15–20 minutes until golden brown. Let it rest for about 5 minutes before slicing.
