  • ⅔ cup uncooked white rice
  • 3 bell peppers (any color)
  • ½ cup cherry tomatoes, quartered
  • ½ cup kalamata olives, chopped
  • ½ cup feta cheese, plus more for topping
  • 1 small red onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon extra virgin olive oil
  • Fresh dill for garnish

Instructions

  1. Preheat your oven to 350℉ (175℃). Cook rice according to package instructions.
  2. Slice the bell peppers in half horizontally and remove seeds. Place cut side up in a baking dish.
  3. In a skillet, heat olive oil over medium heat. Add ground chicken, salt, and pepper; cook until browned (5-7 minutes).
  4. Stir in Italian seasoning, onion, garlic, and zucchini; cook for an additional 2 minutes.
  5. In a bowl, combine cooked rice with chicken mixture, cherry tomatoes, olives, feta cheese, and dill.
  6. Stuff each pepper with the filling and sprinkle additional feta on top. Pour water into the bottom of the baking dish.
  7. Cover with foil and bake for 40-45 minutes until peppers are tender. Serve warm with lemon wedges.
