  • 2 lbs lamb steaks (cubed, or substitute with beef/chicken)
  • 1 large onion (chopped)
  • 3 garlic cloves (sliced)
  • 3 carrots (chunky cubes)
  • 3 celery sticks (diced)
  • 14 oz chopped tomatoes
  • 1 cup orzo
  • 3 cups vegetable stock
  • Olive oil, salt, pepper, bay leaves, cinnamon stick, thyme

Instructions

  1. Heat olive oil in a heavy-bottomed pot over medium heat. Sauté chopped onion until translucent. Add garlic, carrots, and celery; cook until softened.
  2. Add cubed lamb to the pot and brown on all sides.
  3. Stir in chopped tomatoes, bay leaves, cinnamon stick, salt, thyme, and ground pepper. Pour in vegetable stock.
  4. Bring to a boil; add orzo pasta. Cover and simmer on low for 20 minutes until lamb is tender and orzo is cooked.
  5. Discard bay leaves and cinnamon stick. Garnish with parsley and crumbled feta before serving.
