  • 12 oz pasta (penne or fusilli)
  • 2 tbsp extra virgin olive oil
  • 2 cloves garlic, minced
  • ½ small red onion, finely chopped
  • 1 ½ cups cherry tomatoes, halved
  • ½ cup Kalamata olives, sliced
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp dried oregano
  • ½ tsp dried basil
  • ¼ tsp salt (or to taste)
  • ¼ tsp black pepper
  • ½ cup feta cheese, crumbled

Instructions

  1. Cook the pasta according to package instructions. Reserve some pasta water before draining.
  2. In a skillet, heat olive oil over medium heat. Sauté minced garlic and red onion until translucent.
  3. Add cherry tomatoes and Kalamata olives; cook until tomatoes soften (about 3–4 minutes).
  4. Stir in lemon juice, lemon zest, oregano, basil, salt, and pepper.
  5. Combine the cooked pasta with the sauce mixture and add reserved pasta water as needed.
