  • 1/3 cup olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon fresh cracked pepper
  • 1/4 cup fresh chopped dill
  • zest of 1 lemon
  • plain yogurt (not included in ingredient list)

Instructions

  1. Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.
  2. Slice baby red potatoes into wedges and place in a large bowl.
  3. In a small bowl, mix olive oil, oregano, rosemary, garlic powder, paprika, salt, and pepper.
  4. Pour the seasoning mixture over the potato wedges and toss to coat evenly.
  5. Spread the wedges in a single layer on the prepared baking sheet and bake for 15 minutes.
  6. Flip each wedge using tongs and bake for another 15 minutes.
  7. Increase oven temperature to 500°F (260°C), flip again after an additional 15 minutes, and bake until desired crispiness is achieved (5-10 more minutes).
  8. Meanwhile, prepare yogurt sauce by mixing chopped dill and lemon zest into plain yogurt.
  9. Serve warm potato wedges with the creamy yogurt sauce.
