  • 2 pounds green beans
  • 14 oz grape or cherry tomatoes
  • 1/2 cup chopped fresh basil leaves
  • 1/4 cup chopped fresh Italian parsley leaves
  • 1/2 cup feta cheese (cubed)
  • Dressing: 1/3 cup lemon juice
  • 2 cloves garlic (minced)
  • 1/3 cup olive oil
  • 1 tsp dried oregano
  • salt and pepper to taste

Instructions

  1. Parboil green beans in boiling water for about 3 minutes. Transfer to ice water immediately to stop cooking.
  2. In a small bowl, whisk together lemon juice, minced garlic, olive oil, oregano, salt, and pepper.
  3. In a large bowl, combine halved tomatoes, basil, and parsley.
  4. Add drained green beans to the bowl and toss gently.
  5. Pour dressing over the salad and add cubed feta. Mix gently without breaking the feta.
