  • 8 flour or 1216 corn tortillas
  • 1 lb cooked chicken, shredded
  • 4 oz cream cheese
  • 34 cups shredded cheese (Colby Jack & mozzarella recommended)
  • 1 can mild fire-roasted green chiles
  • Salsa Verde (homemade or store-bought)
  • Chicken broth

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, combine shredded chicken, green chiles, cream cheese, and half of the shredded cheese. Season with salt and pepper.
  3. In a baking dish, spread a bit of salsa verde on the bottom. Fill each tortilla with about 1/4 cup of the filling mix and roll tightly.
  4. Place rolled tortillas seam-side down in the baking dish and pour remaining salsa verde over them. Top with leftover shredded cheese.
  5. Cover with foil and bake for 25 minutes; remove foil and bake an additional 15-20 minutes until bubbly.
