  • 4 large whole wheat tortillas
  • 1 zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 red onion, sliced
  • 8 ounces fresh spinach
  • 1 cup cherry tomatoes, halved
  • 1 cup crumbled feta cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • dried oregano
  • dried basil
  • salt
  • pepper

Instructions

  1. Preheat your grill to medium heat.
  2. In a large bowl, mix the sliced zucchini, red bell pepper, and red onion with olive oil and seasonings.
  3. Grill the seasoned veggies for about 5–7 minutes until tender.
  4. Sauté minced garlic in olive oil in a skillet; add spinach until wilted.
  5. On each tortilla, layer grilled veggies, sautéed spinach, cherry tomatoes, feta cheese, and mozzarella. Fold in half.
  6. Grill each quesadilla for 3–4 minutes per side until golden brown and cheese is melted.
