  • 1 lb. lean ground beef
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 3 carrots (sliced)
  • 2 stalks celery (sliced)
  • 2 medium potatoes (diced)
  • 1 teaspoon Italian seasoning
  • 1 bay leaf
  • 4 cups beef broth
  • 1 15 oz. can diced tomatoes, with juice
  • 1 10.5 oz. can condensed tomato soup
  • 3 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 14.5 oz. can cut green beans
  • 1 15.25 oz. can corn, drained

Instructions

  1. Heat olive oil in a Dutch oven over medium heat.
  2. Add ground beef, onion, and garlic; cook until beef is browned.
  3. Stir in carrots and celery; sauté until softened (6-8 minutes).
  4. Add Italian seasoning and bay leaf; cook for another 1–2 minutes.
  5. Pour in beef broth, diced potatoes, diced tomatoes (with juice), tomato soup, tomato paste, and Worcestershire sauce.
  6. Mix in green beans and corn; stir well.
  7. Bring to a boil, then reduce heat and simmer for 35–40 minutes until vegetables are tender.
