  • 2 medium sweet potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup spinach (fresh or frozen)
  • 1 cup low-sodium chicken broth
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • Optional: 1/2 cup shredded cheese for topping

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, add olive oil and sauté onion and garlic until fragrant (2-3 minutes).
  3. Add ground turkey and cook until browned (5-7 minutes). Season with spices.
  4. Stir in red bell pepper and spinach; cook until tender (2-3 minutes).
  5. Boil diced sweet potatoes in a pot until tender (about 10 minutes), then drain.
  6. In a baking dish, layer sweet potatoes at the bottom, top with turkey mixture, and pour chicken broth over.
  7. If desired, sprinkle with shredded cheese and bake for 15-20 minutes until hot and bubbly.
  8. Let cool slightly before serving.
