  • 1 lb ground beef
  • 1 small onion (finely diced)
  • 2 cloves garlic (minced)
  • 2 cups Yukon yellow potatoes (peeled and chopped)
  • 2 cans (14.5 oz each) beef broth
  • 1 can (10 oz) condensed tomato soup
  • 1 can (15 oz) petite diced tomatoes
  • 1 bag (16 oz) frozen mixed vegetables
  • Seasonings: salt, Worcestershire sauce, dried parsley, dried basil

Instructions

  1. In a large soup pot over medium-high heat, brown the ground beef with diced onion, minced garlic, and salt until the meat is no longer pink. Drain excess grease.
  2. Add chopped potatoes, beef broth, condensed tomato soup, diced tomatoes (with juice), frozen mixed vegetables, Worcestershire sauce, parsley, and basil to the pot. Stir well.
  3. Bring the mixture to a boil; then cover and reduce heat to medium-low. Simmer for at least 30 minutes.
  4. Taste and adjust seasoning if needed before serving.
