  • 1 cup mashed sweet potato
  • 2 oz unsweetened dark baking chocolate
  • 1/4 cup creamy cashew or almond butter
  • 1/4 cup pure maple syrup
  • 1 egg
  • 1 egg yolk
  • 1 tsp pure vanilla extract
  • 1/3 cup cacao powder
  • 1 Tbsp coconut flour
  • 1/2 tsp baking soda
  • 1/8 tsp pink salt
  • 1/2 cup dark chocolate chips
  • 1/2 cup chopped pecans or walnuts

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8×8 inch baking pan.
  2. In a bowl, melt dark chocolate and nut butter in the microwave until smooth.
  3. Mix in the sweet potato, maple syrup, egg, yolk, and vanilla extract until combined.
  4. In another bowl, whisk together dry ingredients; then gradually mix into wet ingredients.
  5. Fold in chocolate chips and nuts.
  6. Pour into the prepared pan and bake for about 25 minutes or until a toothpick comes out clean.
  7. Allow to cool before slicing into squares.
