  • 1.5 lb raw chicken breasts, diced
  • 20 oz can of pineapple chunks
  • 1 small red onion, diced
  • 1 red pepper, diced
  • 1 yellow pepper, diced
  • 1 small head of broccoli, chopped
  • 1/4 cup soy sauce (use tamari for gluten-free)
  • 2 tbsp avocado oil

Instructions

  1. Heat 1 tbsp avocado oil in a large pan over medium heat. Add the diced chicken and cook until fully cooked through (7-8 minutes). Remove from pan.
  2. In the same pan, add another tablespoon of avocado oil with the diced onion, peppers, and broccoli. Sauté for an additional 7-8 minutes until softened.
  3. While veggies cook, whisk together the sauce ingredients: soy sauce, pineapple juice, rice wine vinegar, sesame oil, and arrowroot powder.
  4. Return the cooked chicken to the pan with the vegetables; add the sauce and pineapple chunks. Stir everything together.
  5. Cook over medium heat for 5-6 minutes until the sauce thickens to your liking.
