  • 120g all-purpose einkorn flour
  • 105g whole grain spelt flour
  • 1 teaspoon sea salt
  • 1/2 cup milk
  • 5 tablespoons unsalted butter
  • 3 tablespoons white sugar
  • 1 large egg
  • 1 large egg yolk
  • 1/4 cup active sourdough starter
  • 6 ounces softened cream cheese
  • 1/4 cup white sugar
  • 1 1/2 teaspoons all-purpose flour
  • 1/4 teaspoon pure vanilla essence
  • A pinch of salt
  • 12 teaspoons fresh lemon juice
  • 1 tablespoon plus 1 teaspoon all-purpose flour
  • 1 tablespoon plus 1 teaspoon white sugar
  • 1/2 tablespoon unsalted butter, chilled and cut into pieces

Instructions

  1. Combine all-purpose einkorn flour, spelt flour, sea salt, melted butter, milk, sugar, egg, and sourdough starter in a mixing bowl until a soft dough forms.
  2. Let the dough rise in a greased bowl covered with a towel for about 30 minutes.
  3. Prepare the filling by mixing cream cheese, sugar, flour, vanilla essence, and salt until smooth.
  4. Preheat the oven to 350°F (175°C). Roll out the dough to ½ inch thick and cut into squares or circles.
  5. Place about one tablespoon of filling in the center of each piece and fold or pinch closed.
  6. Bake on a parchment-lined baking sheet for about 20 minutes until golden brown.
