  • 4 cups cooked chicken breast
  • 16 oz frozen corn
  • 1 red bell pepper
  • 1 red onion
  • 1 jalapeno
  • ½ cup light mayo
  • ½ cup plain nonfat Greek yogurt
  • Juice and zest of 1 lime
  • Fresh cilantro
  • Scallions
  • olive oil spray

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Chop the red bell pepper, red onion, and jalapeno; spread on a sheet pan with frozen corn. Lightly spray with olive oil and roast for 20-25 minutes until caramelized.
  3. In a bowl, whisk together light mayo, Greek yogurt, lime juice and zest, cumin, paprika, salt, and chili powder.
  4. Once veggies cool slightly, combine them with chopped chicken in the dressing bowl.
  5. Fold in chopped scallions and cilantro until everything is well-coated.
  6. Top with crumbled Cotija cheese before serving.
