  • 1 tbsp butter
  • 1 leek
  • 2 carrots (cut into large pieces)
  • 2 stalks celery (diced)
  • 2 cloves garlic (pressed)
  • 2 tbsp flour
  • 4 cups chicken stock
  • 2 cups cooked turkey or chicken
  • 2 large potatoes (cut into large pieces)
  • 2 bay leaves
  • Fresh thyme and parsley
  • Salt and pepper to taste

Instructions

  1. In a large Dutch oven, melt butter over medium heat. Cook turkey until crispy, then drain excess fat, leaving about 2 tablespoons.
  2. Add leeks, carrots, celery, and thyme; sauté for about 5 minutes until softened. Stir in garlic and cook for an additional minute.
  3. Sprinkle in flour and mix well; gradually pour in chicken stock while scraping any bits from the bottom of the pot. Bring to a boil.
  4. Add potatoes, cooked turkey, and bay leaves; cover and bake at 350°F for 45 minutes.
  5. Before serving, stir in cream if desired and garnish with fresh parsley.
