  • 1/4 Cup Olive Oil (extra virgin)
  • 1 Small Onion (diced)
  • 2 Medium Shallots (chopped)
  • 4 Cloves Garlic (mashed)
  • 2 Carrots (chopped into coins)
  • 2 Celery Stalks (diced)
  • 3 15 Ounce Cans Cannellini Beans (drained and rinsed)
  • 2 Bay Leaves
  • 1 Tablespoon Italian Seasoning
  • 1/2 Teaspoon Red Pepper Flakes
  • 56 Cups Vegetable Broth
  • 1/2 Teaspoon Sea Salt
  • 1/4 Teaspoon Ground Black Pepper
  • 3 Cups Fresh Spinach

Instructions

  1. Heat olive oil in a large pot over medium-low heat.
  2. Sauté diced onion, garlic, and shallots until translucent (3-4 minutes).
  3. Add chopped carrots and celery; sauté for another 7-10 minutes.
  4. Stir in rinsed cannellini beans, bay leaves, Italian seasoning, red pepper flakes, vegetable broth, salt, and pepper.
  5. Bring to a boil; then reduce heat and simmer for 15 minutes.
  6. Remove bay leaves; blend two cups of soup until creamy.
  7. Mix blended soup back into the pot; stir in fresh spinach until wilted.
  8. Serve hot, garnished with parsley if desired.
