  • 1 cup Old Bay seasoning
  • 1/2 cup smoked paprika
  • 6 tablespoons Cajun seasoning
  • 4 tablespoons onion powder
  • 4 tablespoons garlic powder
  • 3 tablespoons cayenne
  • 3 tablespoons red pepper flakes
  • 3 tablespoons dried thyme
  • 3 tablespoons coarse ground black pepper
  • 2 tablespoons ground mustard
  • 2 tablespoons celery seed
  • 1 tablespoon ground coriander
  • 20 quarts water
  • 6.5 tablespoons kosher salt
  • 12 cloves garlic (smashed)
  • 3 medium onions (quartered)
  • 3 whole lemons (cut into rounds)
  • 1/4 cup Louisiana-style hot sauce
  • 6 whole bay leaves
  • 3 pounds red potatoes
  • 3 pounds whole shrimp
  • 3 pounds mussels
  • 2 pounds snow crab clusters
  • 6 ears sweet corn (halved or cut into thirds)
  • 2 cups unsalted butter (4 sticks, or 1 pound)
  • 10 cloves garlic (minced)
  • 1 medium lemon (juice and zest)
  • 1 teaspoon kosher salt
  • 23 cups liquid from the boil to thin the sauce

Instructions

  1. In a bowl, combine all those wonderful spices: Old Bay seasoning, smoked paprika, Cajun seasoning, onion powder, garlic powder, cayenne, red pepper flakes, thyme, black pepper, ground mustard, celery seed, and coriander.
  2. Fill your largest stockpot about halfway with water and bring it to a rolling boil over high heat.
  3. Once your water is boiling fiercely, add kosher salt, bay leaves, quartered onions, hot sauce, smashed garlic cloves, lemon slices, and most of your seasoning mix.
  4. Add the red potatoes into the boiling concoction and let them go for about 12 minutes.
  5. Carefully add in all of your seafood—shrimp and mussels next. Cover the pot and let everything gently boil together for about 10 minutes.
  6. Toss in the corn and let it gently boil for another 5 minutes until everything is perfectly cooked through.
  7. While the seafood is cooking, melt unsalted butter in a separate large saucepan over low heat and add minced garlic.
  8. Gradually mix in any remaining seasoning blend until combined nicely; then add lemon juice and zest along with some liquid from your seafood boil.
  9. Carefully remove all ingredients from the pot using tongs and place them on a large baking sheet lined with newspaper.
  10. Drizzle some of that irresistible spicy garlic butter sauce over everything before garnishing with fresh parsley and lemon wedges.
