  • 3 cups quick oats
  • 3/4 cup unsalted butter (softened)
  • 2 ounces cream cheese (full-fat, brick style)
  • 34 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 tablespoon cream (if needed)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together softened unsalted butter, brown sugar, and granulated sugar until fluffy. Add molasses and vanilla extract, mixing well before adding eggs one at a time.
  3. In another bowl, whisk together flour, cinnamon, baking soda, and salt. Gradually add to the wet mixture, then fold in quick oats gently.
  4. Drop spoonfuls of dough onto lined baking sheets and bake for about 10 minutes until golden around the edges but soft in the center. Allow to cool.
  5. For the filling, beat together softened unsalted butter and cream cheese until smooth. Gradually add powdered sugar until reaching desired sweetness; mix in vanilla extract and salt.
