  • 1 lb orzo
  • 1/2 lb kalamata olives, pitted and chopped
  • 12 oz sun-dried tomatoes in oil, drained and diced
  • 1/2 cup chopped red onion
  • 1 cup spinach, sliced thin
  • 3 tbsp fresh basil, thinly cut
  • 3 tbsp fresh mint, thin strips
  • 1/2 lb feta cheese, crumbled
  • 3 tbsp extra-virgin olive oil
  • 3 tbsp lemon juice
  • lemon zest

Instructions

  1. Bring 2 quarts of water to a boil; add salt and cook orzo until al dente (8–10 minutes). Drain and rinse under cold water.
  2. In a bowl, whisk together olive oil, lemon juice, lemon zest, and black pepper.
  3. In a large mixing bowl, combine cooked orzo with olives, sun-dried tomatoes, red onion, spinach, basil, mint, and feta cheese.
  4. Pour dressing over the salad mixture and toss gently to coat.
  5. Adjust seasoning if needed; serve immediately or chill for 30 minutes to enhance flavors.
