1 to 1 1/2 lbs boneless skinless chicken breasts (cut into 1-inch pieces)
1 Tbsp arrowroot powder (or cornstarch)
1/2 tsp garlic powder
1/4 tsp onion powder
1/4 tsp salt
1/4 tsp black pepper
12 oz green beans (trimmed)
2 Tbsp olive oil (divided)
1/4 cup green onions (chopped)
Sesame seeds (optional garnish)
1/4 cup chicken broth
3 Tbsp low-sodium soy sauce
1/4 cup honey
4 cloves garlic (minced)
1/2 tsp grated ginger (or 1/4 tsp ground ginger)
2 tsp arrowroot powder (or cornstarch)
Instructions
Cut chicken into 1-inch pieces. In a bowl, mix arrowroot powder, garlic powder, onion powder, salt, and pepper. Toss with chicken until coated.
Heat 1 tablespoon olive oil in a skillet over medium-high heat. Add chicken and cook until browned (4-5 minutes). Remove from the skillet.
In the same skillet, add another tablespoon of olive oil and sauté green beans seasoned with salt and pepper for about 6 minutes until tender-crisp.
Whisk together chicken broth, soy sauce, honey, minced garlic, and grated ginger in a bowl. Mix 2 teaspoons of arrowroot powder with water to thicken.
Return chicken to the skillet with green beans. Pour sauce over everything, stir well, and bring to a boil before reducing heat to simmer until thickened.
Serve garnished with sliced green onions and optional sesame seeds.
