  • 1 to 1 1/2 lbs boneless skinless chicken breasts (cut into 1-inch pieces)
  • 1 Tbsp arrowroot powder (or cornstarch)
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 12 oz green beans (trimmed)
  • 2 Tbsp olive oil (divided)
  • 1/4 cup green onions (chopped)
  • Sesame seeds (optional garnish)
  • 1/4 cup chicken broth
  • 3 Tbsp low-sodium soy sauce
  • 1/4 cup honey
  • 4 cloves garlic (minced)
  • 1/2 tsp grated ginger (or 1/4 tsp ground ginger)
  • 2 tsp arrowroot powder (or cornstarch)

Instructions

  1. Cut chicken into 1-inch pieces. In a bowl, mix arrowroot powder, garlic powder, onion powder, salt, and pepper. Toss with chicken until coated.
  2. Heat 1 tablespoon olive oil in a skillet over medium-high heat. Add chicken and cook until browned (4-5 minutes). Remove from the skillet.
  3. In the same skillet, add another tablespoon of olive oil and sauté green beans seasoned with salt and pepper for about 6 minutes until tender-crisp.
  4. Whisk together chicken broth, soy sauce, honey, minced garlic, and grated ginger in a bowl. Mix 2 teaspoons of arrowroot powder with water to thicken.
  5. Return chicken to the skillet with green beans. Pour sauce over everything, stir well, and bring to a boil before reducing heat to simmer until thickened.
  6. Serve garnished with sliced green onions and optional sesame seeds.
