  2. Add butter and reserved drippings; sauté the onion, carrots, and celery until softened (about 5 minutes).
  3. Stir in garlic for one minute before adding flour; cook for an additional two minutes.
  4. Gradually add chicken broth while scraping the bottom of the pot to incorporate flavors.
  5. Add cubed potatoes; simmer uncovered for 20-25 minutes until fork-tender.
  6. Stir in heavy cream, soy sauce, and hot sauce before adding cheddar cheese if desired. Heat through gently.
