  • 1/3 cup canned chicken stock or broth
  • 1 tablespoon tomato paste
  • 2 1/2 pounds ground chuck (81% lean)
  • 1/2 cup plain dry bread crumbs
  • 2 extra-large eggs, beaten
  • 1/2 cup ketchup

Instructions

  1. Preheat the oven to 325 degrees Fahrenheit and line a sheet pan with parchment paper.
  2. In a medium skillet over medium-low heat, heat the olive oil and sauté the onions with thyme, salt, and pepper until translucent (about 8–10 minutes). Remove from heat.
  3. Stir in Worcestershire sauce, chicken stock, and tomato paste into the onion mixture. Allow to cool slightly.
  4. In a large mixing bowl, combine ground chuck, onion mixture, bread crumbs, and beaten eggs. Mix gently to avoid toughness.
  5. Shape the mixture into a loaf on the prepared sheet pan and spread ketchup on top.
  6. Bake for about 1 hour to 1 hour and 15 minutes until the internal temperature reaches 160 degrees Fahrenheit.
