  • 22 ½ pounds beef chuck roast (cut into large chunks)
  • 1 teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 3 tablespoons ghee (or olive oil)
  • 1 tablespoon minced garlic
  • 2 cups chicken or beef broth
  • 1 cup pearl onions (peeled)
  • 2 carrots (cut into chunks)
  • 1 russet potato (cubed)
  • ½ sweet yellow onion (cut into wedges)
  • Fresh thyme and bay leaf

Instructions

  1. Preheat your oven to 350°F.
  2. Season beef chunks with salt and pepper.
  3. In a Dutch oven over medium-high heat, melt ghee and sauté minced garlic until fragrant. Add beef and sear on all sides for about 5–10 minutes.
  4. Add remaining ingredients to the pot, stirring well to combine.
