  • 3 pounds beef stew meat
  • 1 cup onion (coarsely chopped)
  • 1 tablespoon minced garlic
  • 1/4 cup all-purpose flour (or gluten-free alternative)
  • 4 cups beef broth
  • 1/4 cup tomato paste
  • 2 pounds small yellow potatoes (halved)
  • 1/2 teaspoon dried thyme leaves
  • 2 cups carrots (peeled and cut into 1-inch pieces)
  • Salt and pepper to taste
  • 2 tablespoons chopped parsley

Instructions

  1. Preheat your oven to 350 degrees F.
  2. Heat olive oil in a large pot over medium-high heat. Season beef with salt and pepper, then brown in batches for about 3–4 minutes per side; set aside.
  3. In the same pot, sauté onion for 5–6 minutes until tender, then add garlic and cook until fragrant.
  4. Return browned beef to the pot, sprinkle flour over it, and stir well to coat.
  5. Add both types of beef broth, tomato paste, potatoes, thyme, and carrots. Stir to combine; season with salt and pepper.
  6. Cover and bake in the preheated oven for 2½–3 hours until meat and vegetables are tender.
  7. Garnish with fresh parsley before serving.
