  • 1 large egg
  • 0.5 cup unsalted butter
  • 1 cup freshly grated carrots
  • 4 ounces softened cream cheese
  • 1 large egg yolk
  • 0.5 cup granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan or line it with parchment paper.
  2. In a mixing bowl, whisk together the brown sugar, salt, flour, cinnamon, nutmeg, and baking powder.
  3. In another bowl, beat the softened butter until creamy, then mix in the egg and vanilla until well combined.
  4. Gradually add the dry ingredients to the wet mixture until just combined.
  5. Fold in the freshly grated carrots.
  6. For the cream cheese swirl, mix softened cream cheese with granulated sugar and egg yolk until smooth.
  7. Pour half of the carrot cake batter into the prepared pan and spread evenly; dollop cream cheese mixture over it and top with remaining batter.
  8. Using a knife or spatula, gently swirl through both layers to create a marbled effect.
  9. Bake for about 30 minutes or until a toothpick inserted comes out clean.
