  • 1 egg yolk
  • 23 tbsp cold water
  • 1½ cups whole milk
  • ¾ cup granulated sugar
  • 3 large egg yolks
  • ¼ cup cornstarch
  • zest of 1 lemon
  • ½ cup fresh lemon juice (about 2 lemons)
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract

Instructions

  1. Prepare the crust by mixing flour, sugar, and salt. Cut in cold butter until crumbly. Add egg yolk and water gradually until dough forms. Press into a tart pan and chill for 20-30 minutes.
  2. Preheat oven to 350°F (175°C). Prick crust base with a fork and pre-bake for 12-15 minutes until golden. Cool slightly.
  3. For the custard, whisk sugar, cornstarch, lemon zest, and egg yolks in a saucepan. Gradually add milk while whisking over medium heat until thickened. Remove from heat; stir in lemon juice, butter, and vanilla.
