  • 1.5 tbsp lemon zest (about 1 whole lemon)
  • 2 tbsp lemon juice
  • 2 tbsp honey
  • 1.5 tsp garlic powder
  • 2.5 tsp oregano
  • 2 tsp basil
  • 1.25 tsp salt
  • 1/2 tsp black pepper
  • 3/4 tsp red pepper flakes
  • 1 cup Greek yogurt
  • 1/2 cup cucumber (grated and squeezed of excess liquid)
  • 1.5 tbsp lemon juice
  • 1.5 tbsp olive oil
  • 1.5 tsp garlic (finely minced)
  • 1/2 tsp salt
  • 1 tbsp dill (freshly chopped for best flavor)
  • 2 cups cooked rice
  • 2.5 cups tomatoes (diced into 1/2-inch pieces)
  • 2 cups cucumber (diced into 1/2-inch pieces)
  • 4 cups lettuce (torn or chopped)
  • 1 cup red onion (thinly sliced)
  • 1/2 cup feta cheese (crumbled)
  • 1/4 cup fresh parsley (chopped)

Instructions

  1. Marinate the chicken: Combine olive oil, lemon zest and juice, honey, garlic powder, oregano, basil, salt, black pepper, and red pepper flakes in a bowl. Add chicken pieces and marinate for at least 30 minutes.
  2. Prepare tzatziki sauce: Mix Greek yogurt with grated cucumber, lemon juice, olive oil, minced garlic, salt, and dill. Chill until ready to use.
  3. Cook the chicken: Heat a grill pan over medium-high heat and cook marinated chicken for 8–10 minutes until browned and cooked through.
  4. Assemble the bowl: Layer cooked rice at the bottom of bowls topped with grilled chicken and fresh veggies. Drizzle with tzatziki sauce.
