  • 1 cup whole or 2% milk
  • 2 cups powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)
  • 1 teaspoon lime zest (for glaze)

Instructions

  1. Preheat your oven to 350°F and grease two 9×5 inch loaf pans.
  2. In a medium bowl, whisk together flour, baking powder, and salt; set aside.
  3. Cream sugar and softened butter in a large bowl until light and fluffy.
  4. Beat in lime juice, lime zest, and eggs until smooth.
  5. Alternately add the flour mixture and milk to the creamed mixture on low speed.
  6. Pour batter into prepared pans and bake for 55-60 minutes until golden brown and a toothpick comes out clean.
  7. Cool in pans for 20 minutes before transferring to wire racks to cool completely.
