  • 1 lb boneless, skinless chicken thighs
  • 1/4 cup soy sauce
  • 2 tablespoons gochujang (Korean red pepper paste)
  • 1 tablespoon sesame oil
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • 1-inch piece fresh ginger, grated
  • 1 tablespoon rice vinegar
  • 2 cups cooked rice (white or brown)
  • 1 cup kimchi
  • 1 cucumber, thinly sliced
  • 1 carrot, julienned
  • 2 green onions, chopped
  • 1 tablespoon toasted sesame seeds for garnish

Instructions

  1. In a mixing bowl, combine soy sauce, gochujang, sesame oil, honey, garlic, ginger, rice vinegar, sesame seeds, and black pepper for the marinade.
  2. Add chicken thighs to the marinade and coat well. Cover and refrigerate for at least one hour (overnight is best).
  3. Grill marinated chicken over medium-high heat for about 6-7 minutes on each side until cooked through.
  4. Let the chicken rest for five minutes before slicing into bite-sized pieces.
  5. Assemble bowls by placing cooked rice as a base and topping with sliced chicken, kimchi, and fresh vegetables.
  6. Garnish with chopped green onions and toasted sesame seeds before serving.
