  • 1 lb Boneless Skinless Chicken Thighs
  • 1/4 cup Low-Sodium Soy Sauce
  • 2 tbsp Brown Sugar
  • 2 tbsp Honey
  • 2 tbsp Gochujang
  • 2 tbsp Rice Vinegar
  • 1 tbsp Sesame Oil
  • 4 cloves Garlic (minced)
  • 2 cups Shredded Green and Red Cabbage
  • 1 cup Julienned Carrot
  • 1/2 cup Mayonnaise or Greek Yogurt
  • 4 Brioche or Potato Sandwich Buns

Instructions

  1. Marinate the chicken thighs by mixing soy sauce, brown sugar, honey, gochujang, rice vinegar, sesame oil, garlic, and ginger in a bowl. Add the chicken and refrigerate for at least 30 minutes.
  2. In another bowl, combine cabbage, carrot, mayonnaise (or yogurt), and sugar to prepare the slaw. Refrigerate until ready to use.
  3. Heat a skillet over medium-high heat and cook the marinated chicken thighs for about 6-7 minutes per side until cooked through.
  4. Toast the buns in a separate skillet with butter until golden brown.
  5. Assemble by placing chicken on the bottom half of each bun topped with zesty slaw.
