  • 4 cups vegetable broth

  • 1 cup parsley, finely chopped
  • 2 tsp kosher salt
  • ¼ tsp coarse black pepper
  • 2 tsp cumin

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium-high heat. Add lamb, salt, and pepper; brown until caramelized.
  2. Reduce heat to medium; add onion and garlic. Sauté until onions soften.
  3. Stir in cumin; fry for about 15 seconds until fragrant.
  4. Deglaze pan with fire-roasted tomatoes and vegetable broth.
  5. Mix in parsley and mint; partially cover the pot and bring to a boil.
  6. Lower heat to simmer; cook for 60 minutes or until lamb is fork-tender.
