  • 12 lasagna noodles
  • 16 oz ground beef (85% lean)
  • 32 oz marinara sauce
  • 15 oz ricotta cheese
  • 3 cups mozzarella cheese (shredded)
  • 1 large egg
  • 1/4 cup Parmesan cheese (shredded)
  • 1/2 cup diced onion
  • 3 garlic cloves (minced)
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried oregano
  • 1/4 cup parsley (chopped, plus more to garnish)

Instructions

  1. Preheat oven to 375°F. Cook lasagna noodles until al dente; drain and cool in cold water.
  2. In a deep pan, cook ground beef until browned. Add onions and garlic; season with salt, pepper, and oregano. Stir in marinara sauce.
  3. In a mixing bowl, combine ricotta, egg, Parmesan cheese, and parsley.
  4. Assemble by spreading cheese mixture on each noodle, adding meat sauce, then rolling tightly.
  5. Place roll-ups seam-side down in a casserole dish topped with remaining meat sauce and mozzarella cheese.
  6. Bake covered for 40 minutes; uncover and broil for a few minutes until golden.
