  • 1 lb large shrimp, peeled and deveined
  • 12 oz orzo pasta
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped
  • Zest and juice of 1 large lemon
  • 1 tbsp extra-virgin olive oil
  • Cherry tomatoes and baby spinach

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss shrimp with olive oil, salt, pepper, oregano, smoked paprika, and lemon zest. Spread on the baking sheet.
  3. Roast shrimp for 8–10 minutes until opaque and just cooked through; set aside.
  4. Cook orzo according to package instructions until al dente; drain and return to pot.
  5. Stir in olive oil, lemon juice, garlic, and optional red pepper flakes while orzo is hot.
  6. Fold in cherry tomatoes, spinach, parsley, dill, feta cheese, and capers if desired.
  7. Top with roasted shrimp and serve garnished with extra herbs.
