  • 1 cup quinoa
  • 2 cups water
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese (optional)
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water to remove bitterness.
  2. In a medium saucepan, combine quinoa and water; bring to boil. Reduce heat to low and simmer for 15 minutes until tender.
  3. Fluff quinoa with a fork and let it cool.
  4. In a large bowl, mix cooled quinoa with chickpeas, cucumber, red onion, and parsley.
  5. Whisk together olive oil, lemon juice, lemon zest, garlic powder, salt, and pepper in a small bowl; pour over salad and toss well.
  6. Add crumbled feta on top before serving.
