  • 2 tablespoons lemon zest
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons lemon extract
  • 1 large egg (room temperature)
  • 8 ounces strawberries (226 grams) (cored)
  • 3/4 cup unsalted butter (168 grams) (slightly softened, but not starting to melt)
  • 34 cups powdered sugar (330440 grams)
  • 1/4 teaspoon salt
  • 1 tablespoon heavy cream (15 ml) (if needed)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix together flour, baking soda, baking powder, and salt.
  3. In another bowl, cream butter and sugar until light and fluffy. Add lemon zest, vanilla extract, lemon extract, and egg; beat until combined.
  4. Gradually mix dry ingredients into the wet mixture until just combined.
  5. Drop tablespoon-sized portions of dough onto the prepared baking sheet and bake for about 10 minutes or until lightly golden.
  6. While cooling, prepare the strawberry frosting by blending strawberries with softened butter and powdered sugar until creamy.
  7. Once cookies are cool, spread frosting on one cookie and top with another to make sandwiches.
