Mango Tres Leches is a luscious twist on the beloved traditional Latin American dessert. This creamy, milk-soaked cake combines the richness of three types of milk with the sweet and tropical flavor of ripe mangoes, making it a perfect treat for summer gatherings or any festive occasion.

  • 5 large eggs
  • 1 cup white granulated sugar
  • 1 1/2 tsp vanilla extract
  • 1 cup all-purpose flour
  • 14 oz sweetened condensed milk
  • 12 oz evaporated milk
  • 1/2 cup heavy whipping cream
  • Fresh mango chunks

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Beat egg whites until soft peaks form; gradually add 3/4 cup sugar until stiff peaks form.
  3. In another bowl, whisk yolks, remaining sugar, vanilla, and whole milk. Fold in flour and baking powder; then gently fold in egg whites.
  4. Pour batter into a greased 9×13 inch baking pan and bake for about 25 minutes or until a toothpick comes out clean.
  5. Let cool completely before poking holes in the cake to soak with the milk mixture made from sweetened condensed milk, evaporated milk, and whipping cream.
  6. Once soaked, top with whipped cream mixed with powdered sugar and vanilla; garnish with fresh mango chunks.
