  • 45 portions of pasta (spaghetti, linguine, or bucatini)
  • 1 cup chicken broth
  • 1/2 cup canned pumpkin purée
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Chopped fresh parsley for garnish

Instructions

  1. Cook pasta according to package instructions until al dente; drain and set aside.
  2. Season chicken with salt and pepper. In a skillet, heat olive oil and sear chicken until golden brown and cooked through (6-7 minutes per side). Remove from pan.
  3. In the same skillet, melt butter over medium heat and sauté minced garlic until fragrant. Add chicken broth with thyme, sage, and red pepper flakes; simmer for 3-5 minutes.
  4. Stir in pumpkin purée and heavy cream; let everything simmer while stirring until well combined.
  5. Slice the chicken and return it to the skillet along with cooked pasta. Toss to coat everything in the sauce; add Parmesan cheese and let meld for another minute.
  6. Serve garnished with chopped parsley.
