  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup basmati rice
  • 2 cups chicken broth
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley
  • Lemon wedges, for serving

Instructions

  1. Marinate chicken in olive oil, lemon juice, oregano, garlic powder, salt, and pepper for at least 30 minutes.
  2. Cook basmati rice in chicken broth according to package instructions.
  3. Grill marinated chicken on medium-high heat for about 6-7 minutes per side until fully cooked.
  4. Slice the grilled chicken and layer it over a base of rice. Top with cherry tomatoes, cucumber, red onion, olives, and feta.
  5. Garnish with parsley and serve with lemon wedges.
