  • 12 ounces dry pasta (farfalle recommended)
  • 1 English cucumber, diced
  • 1 pint cherry tomatoes, halved
  • 2/3 cup kalamata olives, sliced
  • 4 ounces feta cheese, crumbled
  • 1 medium red onion, thinly sliced
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons red wine vinegar
  • Juice of half a lemon
  • Spices: dried oregano, honey (or sweetener), garlic, black pepper, salt, crushed red pepper flakes

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. In a large mixing bowl, combine diced cucumber, halved tomatoes, sliced olives, and onions.
  3. In a separate bowl, whisk together olive oil, vinegar, lemon juice, oregano, honey (if using), minced garlic, black pepper, salt, and crushed red pepper flakes.
  4. Add the cooked pasta to the vegetable mixture and pour the vinaigrette over everything. Toss gently to combine.
