  • 4 pieces of lavash bread
  • 1/2 cup tomato jam (or raw/sun-dried tomatoes)
  • 6 ounces arugula (or greens of choice)
  • 1/2 cup tofu feta cheese
  • 1 English cucumber (thinly sliced)
  • 1/4 cup diced Kalamata olives
  • 1/2 cup pickled red onions or raw red onions
  • 1/2 cup hummus

Instructions

  1. Lay out each lavash wrap flat on a clean surface.
  2. Spread about 1/4 of the tomato jam on one end of each lavash.
  3. Add 1/4 of the arugula next to the tomato jam.
  4. Sprinkle 1/4 of the tofu feta cheese over the greens.
  5. Place thin slices of cucumber in a row slightly overlapping.
  6. Top with diced kalamata olives and pickled onions.
  7. Spread hummus at the opposite end from where you started.
  8. Carefully roll the lavash tightly from left to right.
  9. Enjoy your sandwich cold or warm it in a skillet for a crispy finish.
