  • 1 pound ground beef
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 1 bell pepper (diced)
  • 1 jalapeño (seeded and chopped; optional)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 4 cups beef broth
  • 1/2 cup long-grain white rice
  • 1 can black beans (drained and rinsed)
  • 1 cup frozen corn
  • Juice of 1 lime
  • Fresh cilantro (chopped)
  • Salt and pepper (to taste)

Instructions

  1. In a large pot over medium-high heat, heat olive oil and brown the ground beef. Drain excess fat.
  2. Add diced onion, bell pepper, and jalapeño; sauté for about five minutes until softened. Stir in minced garlic and cook for another minute.
  3. Sprinkle in cumin, chili powder, and other spices; cook for one minute before adding diced tomatoes with their juice.
  4. Pour in beef broth; bring to a boil. Stir in rice and reduce heat to low; simmer for about 15 minutes.
  5. Add black beans and corn; simmer for an additional five minutes until warmed through.
  6. Season with salt, pepper, lime juice, and cilantro before serving.
