2 cups fresh-squeezed Meyer lemon juice
2 cups water
1 package SureJell pectin
4 1/2 cups sugar
In a large, heavy-bottomed pan, mix the Meyer lemon juice, water, and SureJell pectin.
Bring the mixture to a rolling boil and let it boil for one minute to activate the pectin.
Stir in the sugar until dissolved and return to a rolling boil for another minute.
Remove from heat and ladle the hot jelly into sterile jars, leaving about 1/4 inch headspace.
Wipe jar rims clean, seal with lids and rings, then process in a water bath canner for eight minutes.
