  • 2 cups fresh-squeezed Meyer lemon juice
  • 2 cups water
  • 1 package SureJell pectin
  • 4 1/2 cups sugar

Instructions

  1. In a large, heavy-bottomed pan, mix the Meyer lemon juice, water, and SureJell pectin.
  2. Bring the mixture to a rolling boil and let it boil for one minute to activate the pectin.
  3. Stir in the sugar until dissolved and return to a rolling boil for another minute.
  4. Remove from heat and ladle the hot jelly into sterile jars, leaving about 1/4 inch headspace.
  5. Wipe jar rims clean, seal with lids and rings, then process in a water bath canner for eight minutes.
