  • 1 container whole-milk ricotta cheese (15 oz., drained)
  • 1/2 cup powdered sugar
  • 2 tablespoons granulated sugar
  • 1 teaspoon finely grated orange or lemon zest
  • 1/2 teaspoon vanilla extract
  • 1 box refrigerated pie crusts, softened as directed on box (2 count)
  • 3 tablespoons turbinado sugar (raw sugar)
  • 1 teaspoon ground cinnamon
  • 1/4 cup miniature semisweet chocolate chips or finely chopped pistachios
  • additional powdered sugar

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Roll out pie crusts; sprinkle with turbinado sugar and cinnamon, then cut into circles.
  3. Press circles into ungreased mini muffin tins and bake for 10 minutes until golden brown.
  4. In a bowl, mix ricotta cheese, powdered sugar, granulated sugar, zest, and vanilla until creamy.
  5. Transfer the filling to a bag; refrigerate until ready to serve.
  6. Pipe filling into cooled pastry cups and top with chocolate chips or pistachios.
